Stop Doing More With Less

Over the past several years, the workforce has changed: baby boomers are retiring in droves, birth rates are down substantially over the last 50 years, work-life balance is a top priority and there are 8.8 million U.S. jobs open and only 6.4 million unemployed Americans. According to human resource experts likes Jodie Cunningham of Kopplin, Kuebler & Wallace, employers must adjust accordingly if they are going to compete for talent.

Workers today prioritize well-being and work-life balance more than ever before. “Just because it was once customary to work 60, 70 or 80 hours a week does not make it right for the future. That approach isn’t sustainable,” Cunningham explained. “If clubs continue to overwork the talent they employ, they will drive great employees away from our industry.” Clubs that commit to 40-hour work weeks for their employees reap tremendous benefits in retention and productivity.

Dues increases over the last few years—many of which were fairly significant—have members expecting enhanced experiences, added value and additional amenities and/or services. Clubs should be adding employee positions to ensure all workers have manageable workloads and can complete their duties in 40 hours per week. Yet some boards are expecting and directing their GMs to be cutting expenses and eliminating “unneeded” staff positions. Cunningham maintains that successful clubs are evolving their organizational charts and adding employees to pick up specific duties and provide additional coverage, an initiative that directly improves the member experience.

“In the past five years, clubs have proactively added strategic human resource leaders to their staffs. This person is responsible for quarterbacking the talent strategy with the leadership team,” she said. “Clubs with a strategic people and culture professional have a coordinated plan to recruit, train, develop and retain great people. This directly impacts the member experience.”

Cunningham urges club executives have conversations with their management teams about the current organizational chart and whether it meets the needs of the club today and in the near future. If employees are regularly overworked, it is time to find ways to make those roles more manageable in 40 hours per week. Perhaps adding a communications person to take over club communications or hiring another food and beverage manager to help cover shifts would make sense? Maybe another assistant golf professional is needed so each can get time off each week during peak season? These are the kinds of evolutions necessary to keep workers today.

“It’s also important to be cognizant of behavior fit for the position,” Cunningham warned. “If you put people in roles that don’t suit them naturally, they will burn out and leave, or worse…they will burn out and stay.”

Resources & Insights From Chris…

Coaching is not about providing solutions. How can we have the right answer to another person’s dreams or aspirations? Leaders often think “I’m in charge”; “I have to have all the answers” (as one misguided leader told me over a decade ago); or “it’s my job to get things right.” When we give out solutions like a lollipop at the doctor, we deny others an opportunity to grow. If you try to help a butterfly out of his cocoon, he will not develop the muscles needed to fly. As a coach, there is the opportunity to be amazed by the transformation someone can make…

Partnering with leaders in a thought provoking, creative process that inspires them to maximize their personal and professional potential.

“Over the past year, our partnership with Chris has been a tremendous resource for our team. He has provided our leaders continuous mentorship and ensured implementation of a holistic leadership training and development program. These best practices have truly enhanced our club’s mission, employee culture, and member experience.”

Private Club Governance: A Handbook Of Principles And Best Practices

Private-Club-Governance-Handbook

The National Club Association (NCA) and Club Management Association of America (CMAA) released “Private Club Governance: A Handbook of Principles and Best Practices.” Written by a joint committee of experts including KK&W partner, Thomas B. Wallace III, CCM, CCE, ECM, the new publication is a definitive guide to governance of private clubs, designed to be a framework of best practices for clubs at any place on the spectrum of effective governance.

“Governance is among the most discussed issue at any private club,” said joint Governance Committee Chair Tim Muessle, CCM, CCE, Chief Operating Officer, The Olympic Club, San Francisco. “This new publication was written to clearly define the standard of effective governance, offering best practices for club boards, committees and general managers/CEOs.”

The handbook is a comprehensive guide on establishing and maintaining good governance, and covers everything from bylaws and articles of incorporation to board policies, committee structure and roles to evaluations and improvement. It also includes a chapter of sample documents every club board should have.

NCA members can access the handbook here. CMAA members can access it here.

“Private Club Governance” was developed by a joint committee of experts from both associations in a partnership structured to benefit the entire private club community. NCA and CMAA will offer continuing education based on it for club presidents, boards, and CEOs/general managers, including at CMAA’s 2023 Leadership/Legislative Conference Sept. 11-13, and during a joint, online symposium hosted by NCA Sept. 25.

Is a Healthier Future for Club Chefs Possible?

Is a Healthier Future for Club Chefs Possible?

Over the past forty years, the culinary industry has undergone remarkable changes, driven by advancements in equipment technology, cooking methods, and the workforce. As our profession evolves, we must also address unforeseen challenges, such as a cashless economy, the rise of food channels, and the culture of bottled water. Amidst these shifts, one thing remains constant—the physical demands of our profession as club chefs.

Innovation has touched every aspect of our culinary world, from the introduction of computer-controlled cooking systems to the infusion of technology in bread ovens and ice cream machines. However, despite all these progressions, the kitchen will always be a fast-paced, physical environment requiring a healthy and agile workforce. As we embrace new techniques and trends, we must not overlook the importance of physical well-being and its impact on our profession’s future.

The sustainability of our culinary workforce is a growing concern. The physical requirements of our profession demand a healthy and flexible body capable of producing artisanal creations that delight our members and guests. Culinary schools face the challenge of admitting students who can endure the rigors of the kitchen. Health privacy laws prevent us from knowing the physical condition of potential students before they invest in their culinary education.

To ensure a healthier future for our industry, we need to prioritize the well-being of our workforce. Events and gatherings should incorporate topics focusing on maintaining a healthy profession and inviting world-class medical professionals to share insights on physical well-being. Additionally, we can work towards offering healthier meal options at these events, promoting raw, fresh ingredients that reflect the care we have for our members.

As chefs, we have a unique responsibility to lead by example in matters of food ingestion. The public relies on us to understand how different ingredients and cooking methods affect the nutritional value of their meals. By advocating for healthier options and transparent menu labeling, we can empower our customers to make informed choices.

Our role as club chefs goes beyond just creating delicious dishes; it extends to promoting a healthier lifestyle through our culinary creations. Just as a doctor’s diet is a reflection of their field, our eating habits hold a significant impact as representatives of the culinary profession. By valuing and prioritizing quality ingredients, we contribute to the public’s understanding of the importance of a healthy diet.

Ultimately, the future impact of our profession lies not only in the words of an Executive Chef, but in the example they set through their own choices. Embracing a healthy lifestyle and demonstrating our commitment to well-being will strengthen our profession and inspire positive change in the broader culinary landscape.

Let us continue to innovate and improve our craft while remembering that a healthy workforce is the cornerstone of a thriving culinary future. By prioritizing the health of our profession, we can ensure that the art of culinary excellence endures for generations to come.
